4 cups of cold flour (white and wheat combo)
4 tbs. of baking powder
1 cup of water
2 tablespoons of brown sugar
1 tablespoon of coconut oil
Combine all the dry ingredients into a large bowl and mix well. Combine the water and sugar to taste and then pour into the dry mixture along with the coconut oil until it is somewhat sticky. Mix well until you get a sticky texture. In a separate small bowl have about two cups of flour for dipping the dough in.
Take a tablespoon of dough and dip into the flour to slightly cover the sticky dough. Place the covered dough on a cutting board or tray. Repeat the process for every dough ball.
Place a large frying pan on the stove with a medium fire. Put four tablespoons of coconut oil in the pan and heat. When the pan is heated, you can place the dough into the palm of your hands and slightly flatten out.
Place the slightly flatten dough into the pan and cover with lid. This process of covering the pan allows it to cook throughout without using a lot of oil. Allow the bake to get slightly golden brown on one side and then repeat the process.
Place the fried baked on a baking tray lined with two pieces of paper towel to remove any excess oil and cover with another paper towel while completing the remaining bakes. Serve this delightful bake with any side dish. Some people like to eat it with just butter. Others like it with any other side dish.
The most popular Caribbean way to eat it is with a dish called salt fish, hence,the dish bake & salt fish.
Note: While frying the second set of bakes the oil will decrease. Just add as needed to cover the bottom of the pan.
